Drago SIX also allows pizza chefs to reach oven baking temperature in MODULATING mode, progressively lowering the high flame until it goes out completely when it reaches the baking temperature setpoint, thus without creating thermal inertia inside the oven. Alternatively, the pizza chef can decide to reach the set temperature manually, intervening personally to set the most suitable flame power level for baking a specific product at a specific time.
The Drago SIX control panel can also be used to lock the high flame start, whatever the set temperature. The BOOSTER button is suited particularly for baking Neapolitan-style pizza, as it gives the oven a BOOST for a programmable time before baking, with automatic switch-off.

DRAGO SIX REVERSE FLAME MODEL
DRAGO SIX is available in reverse flame model for ovens where it is not possible to drill a hole beneath the baking floor. In this case the 150 mm hole can be made on the side wall of the oven.
